AERATION

Sucrose esters are water-soluble emulsifiers that are very powerful in decreasing the surface tension between water and air. This makes sucrose esters exceptional aerating agents.


COLD EMULSIFICATION

Discover how a low dosage of just 0.2% sucrose esters creates a fine, white, and stable foam on top of a drink. Interestingly, the sucrose esters are simply added to cold water—no heating needed!


TOPPING

Our Chilled Chai Latte is finished with a vegan whipped topping. With sucrose esters, this vegan topping is stable and created high nice foam when whipped!
