Premium ice creams are often flavoured with high quality, expensive flavours. The intensity and the spectrum of the flavour are affected by the ice cream matrix. Emulsifiers and stabilisers are selected for their effect on the ice cream matrix e.g. the melting characteristics and stability. The most commonly used emulsifier, distilled monoglyceride (DMG), can give a waxy mouth feel which at the same time gives a sensation of flavour coverage.
Sucrose esters are known for their usage in artisanal ‘Italian’ ice cream. Bianca van Ingen, product manager at Sisterna explains ‘we were convinced of the unique functionalities of sucrose esters in artisanal ice cream. It was a matter of testing the effects in industrial ice cream to find the unique functions of sucrose esters in this product.’
In our lab a comparison is made between industrial vanilla ice cream (10% fat) based on 0.3% DMG or 0.3% Sisterna® sucrose esters. The most apparent difference lies in the flavour perception. A trained panel, blind tested both ice creams. They found a significant stronger creamy/buttery flavour attribute in the sucrose ester ice cream. After heat shocking (cycling over -10 to -20˚C) the ‘vanillic’ flavour attribute was significantly stronger in the sucrose ester ice cream.
Sisterna® sucrose esters can improve the flavour outcome in industrial ice cream. We recommend to partly replace DMG with Sisterna® sucrose esters at a ratio of 4:1 to 3:1.
