Esterification.

The primary hydroxyl groups of the sucrose molecule are esterified with fatty acids. There is a wide range of sucrose esters available since the sucrose ester type varies with:

• the type of fatty acids used (laurate, palmitate, stearate)
• the degree of esterification (mono-, di- or higher esters).
